Half or Whole Steers Sold by Hanging Weight
The hanging weight is the weight of the animal after the hide, head, hooves, blood and organs have been removed. The hanging weight is usually somewhere around 60-65% of the live weight of the animal. The amount of actual meat you receive will be approximately 70% of the hanging weight. Example: an 1,100 lb. live weight animal will produce a 660 lb. hanging weight and you will get around 462 lbs, of meat from that animal. This has been the common way of pricing beef shares for many years. The processor informs the farmer of their hanging weights when the animal is ready for pick up and that weight is passed along to the customer.
